Strawberries on a souffle in tin

We’re always cooking up something delicious at our Texas bed and breakfast. We thought it was time we share one of our favorites with you! Try this decadent soufflé recipe for yourself and let us know how it turns out! This recipe serves 12. Here’s how to make it…

Ingredients:

  • 1/2 Cup softened butter
  • 1/3 Cup Sugar
  • 6 Eggs
  • ½ Cup softened butter
  • 1/3 Cup Sugar
  • 6 Eggs
  • 1 ½ Cups Sour Cream
  • ½ Cup Orange Juice
  • 1 Cup Flour
  • 2 teaspoons Baking Powder

Directions:

Preheat oven to 350.  Butter a 9” x 13” baking dish, set aside.  In a large bowl, mix butter, sugar, eggs, sour cream, orange juice, flour and baking powder until well blended.  Pour ½ the batter into the baking dish.  Set remaining half aside.  Prepare Blintz filling.

Blintz Filling:

  • 8 oz. Cream Cheese
  • 1 pint Cottage Cheese (2 cups)
  • 2 Egg Yolks
  • 1 Tablespoon Sugar
  • 1 Teaspoon Vanilla
  • Fresh Blueberries (optional)

Directions:

In medium bowl, combine all ingredients except berries.  Mix until well blended.  Drop filling by heaping teaspoons over the batter in the baking dish.  Spread filling evenly over batter.  Pour remaining batter over the filling.  Scatter berries on top.  Bake uncovered at 350 for 45 – 50 minutes or until puffed and golden.  Serve immediately with sour cream and/or blueberry syrup or sauce.
